Koh Samui Salmon Fillet

 

Ingredients


3 Cups SAMBA Seafood Smoking Chips

1 salmon fillet (800g approx.)

½ cup soy sauce

2 tsp fresh ground ginger

2 Tbs fresh coriander -finely chopped

1 Tbs olive oil

 

Method


Soak Smoking Chips in water, white or red wine or whiskey for minimum 1 hour. Smoking Chips can be used in smoker box or wrapped in foil. Mix all ingredients together and baste flesh sides of fillet. Place on BBQ grill plate on low heat. When Smoking Chips begin to release smoke close the hood. Salmon should be cooked in 20-30 minutes. Heat remaining sauce and drizzle over the fillet.

Classic Bourbon Beef

 

Ingredients

 

4 cups SAMBA Beef & Lamb Smoking Chips.

1kg beef fillet

Salt and pepper

Dijon mustard

4 small red onions

8 small potatoes - washed but unpeeled

 

 

Method


Soak Smoking Chips in Bourbon (water, white or red wine can also be used) for minimum 1 hour. Smoking Chips can be used in smoker box, wrapped in foil or directly on coals Season beef fillet with salt & pepper and rub with Dijon mustard. Microwave potatoes with ½ cup of water for 3 minutes on full. Add onions, drizzle with olive oil, season with salt and pepper. Place fillet on grill plate near smoker, add small red onions and potatoes and cook on high heat for 15-20 minutes turning beef 2-3 times. Once cooked, remove onions and potatoes and place in pot with a Tbs of butter and 2 Tbs of sugar and cook until caramelised. Slice beef thinly and serve with a simple brown gravy or mushroom sauce.
